There’s a ‘wow’ factor to everything around you – from the integration of old and new architecture, to the multi-coloured obelisks housing the botanicals, to meeting Annie, Lina and Matilda, the three custom-engineered stills that will significantly increase output. And, of course, to the tasting rooms themselves, to the reception areas, the open to public bar, even to the retail store. There’s a real buzz about this place.
In his interview with me, Head Distiller David Wilkinson is filled with pride as he walks us through this incredible building. We also discuss what it takes to make the quality gin that stems from Edinburgh Gin, the challenges faced and the sustainable actions Ian Macleod has also taken. There is little doubt that the Edinburgh Gin Distillery will not only provide another major tourist attraction for the city, it is also an outstanding beacon for Ian Macleod Distillers to the world.
